How to recognize a hight quality EVO oil?
Just take a few but very important parameters as a reference.
ACIDITY: the lower its value, the higher the quality of the product, in an extra virgin olive oil the acidity must not exceed 0.80%. Olio Aroldo has 0.17% acidity.
PEROXIDES: These are oxidative alterations, degradation and aging of the oil. The lower its value, the higher the quality of the product. It must never exceed 20 mEq 02 / kg. Olio Aroldo reached 6 mEq O2 / kg
TOTAL POLYPHENOLS (BIOPHENOLS): They are among the most precious components of extra virgin olive oil, unique among vegetable fats to be rich in it. The minimum quantity of polyphenols or biophenols in an extra virgin olive oil is 150 mg / kg. The greater the quantity, the higher the quality of the oil. Olio Aroldo has set the value at 577 mg / kg.
The analyzes carried out at the CAIM GROUP Laboratory in Follonica confirm that our oil is free from pesticides and pesticides . In short, it is a 100% natural product.
