As you know, the olive harvest is an important time for our company, and we are happy to announce that it has begun!
This year, the predictions are very positive, and it is shaping up to be a great year. The olive growing season started well, with a beautiful flowering in spring. This was followed by a good fruit set, the formation of the fruits.
The yields will not be very high, due to the smaller and drier olives. However, the quality will be significantly superior, thanks to the favorable climatic conditions during the growing season.
In these days, we are working to harvest the olives and it will last for about 3-4 weeks. The olives are harvested with a shaker comb and in part with the Spedo Fruipick machine.
Once harvested, the olives are taken to the mill, where they are processed within 24 hours. The mill we use, the Oleificio OL.MA, is equipped with state-of-the-art technologies that allow us to extract extra virgin olive oil naturally and preserve all its organoleptic properties.
